Malolactic fermentation

The conversion of malic acid into lactic acid by bacteria: the wine becomes softer.

After the alcoholic fermentation, lactic bacteria convert the malic acid in the wine into lactic acid. The acidity of the wine softens.

It is almost always sought for red wines, and for whites depending on the style intended.
