Mutage

The addition of alcohol during fermentation to stop it: the wine keeps part of its sugar.

Mutage means adding alcohol of wine origin to the fermenting must. The yeasts stop, and the wine keeps part of the natural sugar of the grape.

This is how vins doux naturels are made, such as Banyuls, Rivesaltes or Muscat de Beaumes-de-Venise.
