Specification (cahier des charges)

The text that sets the rules of an appellation: area, grape varieties, yields, practices.

The specification of an appellation sets what a wine must comply with to bear its name: the geographical area, the grape varieties, the yields, how the vines are grown, the winemaking, the ageing.

It is drawn up by the producers, grouped in a body for the protection and management of the appellation, examined by INAO and approved by ministerial order.
