Sur lie

A wine aged in contact with its lees, the yeast deposit left by fermentation.

The lees are the yeast deposit that forms after fermentation. A wine aged sur lie stays in contact with them until it is bottled, which gives it roundness.

The term “sur lie” appears in the specification of some appellations, such as Muscadet, which sets its conditions.
