Vin jaune

A white wine from the Jura, made from savagnin, aged for years in barrel under a veil of yeast.

Vin jaune is a white wine from the Jura made from savagnin. It is aged in barrel without topping up, that is without replacing the wine that evaporates: a veil of yeast forms on its surface and protects it from the air.

The specification requires ageing under the veil for at least sixty months, and the wine may only be sold from 15 December of the sixth year after the harvest. It is bottled in the clavelin, of 62 cl.

Château-Chalon produces only vin jaune; Arbois, Côtes du Jura and L'Étoile may also bear this term.
